Gelato may be quick frozen and shipped to shops and then served.
It will usually be slightly harder and a flat display on top.
We at Double Delites choose to make it fresh in
our shop all day long. This is our basic process;
All the ingredients are measured to the gram.
When Stefano, Marco and Cal taught us how to make gelato, they emphasized
the exact measurements.
