What is Gelato? How is it Made? What flavors are available
How 
              is Gelato made?
There are many recipes and techniques for making and serving Gelato.

Gelato may be quick frozen and shipped to shops and then served. It will usually be slightly harder and a flat display on top.

We at Double Delites choose to make it fresh in our shop all day long. This is our basic process;

  • We receive imported flavors, or the Italians call some of the pastes, that come in cans. I think it is interesting that on the can there are 16 languages. I feel that other countries cannot reproduce the high quality richness and intenseness of the flavors.
  • Next we add the flavor to a base mix
  • Sugar is added
  • Whole milk for the Gelato and water for the fruit Sorbettos
  • The mixture is poured into a batch freezer programmed for Gelato
  • The finished Gelato is frozen for 5-10 minutes to set
  • Then the gelato is decorated and presented in a case that is 10 degrees below normal ice cream cases.
  • All the ingredients are measured to the gram.

    When Stefano, Marco and Cal taught us how to make gelato, they emphasized the exact measurements.
